This week's Sunday bake - a veganized version of @MarissaLingen 's Brun Brod (Norwegian Spice) cookies - turned out to be DELICIOUS. The whole family loves them, and I will definitely be making them again!

I broke my vegan macaron curse by using potato protein as the base for the meringue instead of aquafaba and I was very impressed. Like really impressed the macarons were slot more fuller which was very nice to see. This is my most recent purchase and I HIGHLY recommend it. Been recipe testing today. Make a small 5 inch vegan humming bird cake that I can make for weddings and birthday cakes as I have a couple to make in the next few months and really want to make sure the cakes taste nice and hold up. This was a success. The taste was there and the icing held firm the ganache is a water ganache drip. #vegan #veganbaking #cake

Okay this is my second attempt at vegan macarons. They kept their shape but they did not develop the “feet” that macarons get.
However they did not explode like the first lot did so I would say that is growth!

So this just a test cake that I am not decorating but I have been playing around with a vegan sponge cake recipe for the last 8 months that can be used in celebration cakes, staked and even carved into simple designs and I have final got it
Currently settled on a mostly Khorasan wheat "base" for homemade bread, along with:
* amaranth, teff, brown and red rice, tricolor quinoa, millet, buckwheat, sorghum, spelt, rye, and oat berries home-milled into multigrain flour
* flax, chia, sunflower, and pumpkin seeds turned into seed flour
* sesame and poppy seeds added whole
The overall formula is:
2/3 Khorasan flour
1/6 multigrain flour
1/6 seed flour

@ConorMahood You can substitute 1T flax seed + 3T hot water for 1 egg in any baking recipe.
And to follow up on your (excellent) “read your writing aloud” advice, I will call and raise, with, “read your writing aloud in a foreign accent.” It works wonders.
